How to make eggless wholewheat chocolate chips cookies
1. Preheat the oven to 180C. Line a baking tray with parchment paper.
2. Cream together the butter, sugar/jaggery and vanilla essence till it all incorporates well.
3. To this add the flour, corn starch, salt and baking soda and mix well.
4. Add milk if the dough looks dry. However, if it all comes together as a nice and soft dough, then there is no need to add any milk.
5. Add the chocolate chips/chunks into the cookie dough and mix well. Make small balls of these and slightly press and place them on the prepared baking tray.
6. You can also refrigerate the dough for 10-15 min and then roll it out. Use a cookie cutter to cut cookies into different shapes and place them on the baking tray.
7. Bake the cookies for about 10 min till the bottom turns light brown.
8. Remove it from the oven and let it cool completely before storing it in an airtight container.

Ingredients required:
Cashew nuts – 1 cup
Sugar – ½ cup
Water – ¼ cup
Ghee melted – 1 tsp
Edible silver foil – optional

How to make kaju katli:
1. Grind the cashews into a fine powder.
2. Sieve the cashew powder to ensure there are no lumps.
3. In a broad non-stick pan, mix water and sugar on medium heat.
4. You will see tiny bubbles appear on the surface, stir gently, and let it come to a rolling boil. Lower the heat.
5. Bring it to a boil for about 4 minutes and let it come to 1 thread consistency
6. Turn the heat on low.
7. Add cashew powder and stir using a spatula to avoid lumping.
8. In a minute or so, you’ll see that the cashew mixture is getting thicker.
9. Add melted ghee.
10. Keep cooking; turn off the heat as the dough starts leaving the pan.
11. To check the right consistency, take a tiny pinch of the mixture in your hand and see if you can shape a little ball with your fingers.
12. Remove the dough from the pan on a greased plate or parchment paper and knead the dough to make it less grainy, glossy, and smooth (roughly 5-6 minutes)
13. On the rolling board, place a greaseproof paper and the kneaded cashew dough on it. Place another paper, sandwiching the mixture between two papers
14. Once cooled down, top with edible silver, and cut into diamonds.

Ghee – 2 tbsp
Cashews – 1 tbsp, chopped
Almonds – 1 tbsp, chopped
Pistachios – 1 tbsp, chopped
Chironji – 1 tbsp
Raisins – 2 tbsp
Dates – 2, seedless and chopped
Sewaiyan (Whole Wheat Vermicelli) – ½ cup
Full Fat Milk – 500 ml
Dates – 3, seedless and chopped
Cardamom Powder – 1/8 tsp
Condensed Milk – 100 gms

How to make sheer khurma
1. In a pan, add the ghee. Once the ghee is hot, add the cashews, almonds, pistachios and chironji and fry till they start changing colour.
2. To this, add the dates and raisins and fry till fragrant. Remove some of the fried dry fruits from the ghee and keep them aside for garnish. Into the remaining, break the sewaiyan into smaller pieces and fry till it is fragrant and starts changing colour. Take this off the heat and keep it aside.
3. In a pan or a Kadai, add the milk. Let it come to a boil and add the dates. Cook the milk till it starts reducing and thickening.
4. To this, add all the fried ingredients and cook for a couple of minutes. Add the cardamom powder and condensed milk and cook it for another couple of minutes till the sheer khurma has thickened a little more. This will thicken further as it cools down. Turn off the heat and transfer to a serving bowl.
5. Garnish with the reserved fried dry fruits and serve.
