It’s surprising that peanut chikkis have become famous from the Indian railways. It has made its way in all households today, may it be for evening snacks with friends or a lazy tiffin day when chikkis are packed along with some cut fruits. The versatility of the chikki in both taste and health has made it an easy and a must-have in all Indian kitchen pantries. Try this recipe made with just jaggery and peanuts, for the festive days of Sankranti. It’s much better when handmade at home.

    How to make Peanut Chikki at home

    Step 1

    Roast the peanuts on low to medium flame till they are aromatic and skin starts splitting.

    Step 2

    Remove it from heat and once it cools down, remove the skin by rubbing the peanuts.

    Step 3

    In a pan, add the jaggery and water and let it cook together on low flame. Boil the syrup till it reaches a hard boil stage. If you drop a little of the syrup in water, and break it, it will snap and not be stringy. At this stage, turn off the heat and add the roasted peanuts to the jaggery syrup and mix well.

    Step 4

    .Either grease a plate with some ghee. And transfer the peanut mix onto it. Or transfer it to a parchment paper. Place another paper on top of it and roll it with a rolling pin to flatten. Cut into desired shape and let it cool down completely. Store in an airtight container.
