Maida / plain flour – 2 cups
Curd – 1 cup
Salt – ¾ tsp
Baking soda – 1 tsp
Chilli – 2 (finely chopped)
Ginger (finely chopped) – 1-inch
Few curry leaves (chopped)
Coconut (shredded) – 2 tbsp
Coriander (finely chopped) – 2 tbsp
Cumin – 1 tsp
Oil (for frying)

How to make Mysore Bonda:
1. Firstly, in a large bowl, take 1 cup curd, ¾ tsp salt and 1 tsp baking soda.
2. Mix well until the curd turns frothy.
3. Now add 2 cups maida and start to mix gently.
4. Add more curd if required. Beat it well.
5. Add 2 chilli, 1-inch ginger, a few curry leaves, 2 tbsp coconut, 2 tbsp coriander and 1 tsp cumin.
6. Mix and combine everything well. Cover and let it rest for 4 hours.
7. After 4 hours, the batter will turn airy.
8. Beat it further for a minute.
9. Dip your hand in the water and pinch a ball-sized batter.
10. Drop in hot oil and fry in medium hot oil till the bonda are crisp and golden, turning them over as needed.
11. Remove with a slotted spoon and place them on kitchen paper towels to absorb excess oil.
12. Fry the remaining batches of bonda similarly.
13. Serve Mysore bonda with coconut chutney.

Idly Sambar

Ingredients required
For sambar:
Oil – 2 tsp
Mustard seeds – 1 tsp
Methi/fenugreek seeds – ¼ tsp
Pinch of hing / asafoetida
A few curry leaves
Green chilli – 2 (slit)
Shallots – 4
Tomato – 1 (chopped)
Drumstick – 5 pieces
Turmeric – ¼ tsp
Jaggery – ½ tsp
Salt – 1 tsp
Water – 1 cup
Tamarind extract – ¾ cup
Toor dal – 1 cup (boiled)
Coriander leaves – 2 tbsp (finely chopped)

How to make sambar.

1. In a kadai heat, 2 tsp of oil, add mustard & methi seeds, a few curry leaves and a pinch of asafoetida and let it splutter.
2. Add shallots and chillies and saute for a minute till it changes colour.
3. Add tomato and continue to cook till tomatoes soften.
4. Add mixed vegetables and saute for 2 minutes.
5. Further, add ¼ tsp turmeric, ½ tsp jaggery, 1 tsp salt and 1 cup water mix well, cover and boil for 10 minutes.
6. Add ¾ cup tamarind extract and mix well. Cover and boil for 10 more minutes.
7. Add boiled toor dal and water mix well, and let it simmer on low flame until the flavours are well absorbed.
8. Add in 2 tbsp coriander leaves and mix well.
9. Enjoy the sambar with hot steamed idli.

Black Halwa

Ingredients required:
Jaggery – 1kg
Coconut – 2 nos
Rice flour – 150 gm
Maida – 250 gm
Ghee as required

Cardamon powder – 1 tsp

How to make black halwa:
1. Heat a heavy-bottomed pan and add jaggery; add half a cup of water and heat until the jaggery melts.
2. In a mixing bowl, add maida, rice powder, and coconut milk. And mix well without lumps. Add the jaggery solution to this mixture after pouring it into an uruli/ Kadai
3. Cook this mixture over a medium flame until it begins to thicken. When it starts thickening, add ghee.
4. Stir continuously until the mixture begins to roll and the halwa begins to leave the sides of the pan. Then add cardamom powder and mix well.
5. Transfer it to a greased plate, add some cashew nuts and allow it to cool.
6. After 1 hour, unmould the halwa, cut it into the desired shapes, and enjoy.
